The thermostats restrict and control the amount of water around the cylinder head. If you run without thermostats the water is circulating too fast and doesn't allow the cylinder head to run at the proper temperature and doesn't allow the cooling water to take the heat from the engine.I was fortunate to acquire a used boat that I have been getting ready for the water.
