Going Strength instead of Dexterity with the Tavern Brawler feat works really well. Dip 1 level into fighter to gain proficiency with armor and shield. Only Unarmored Defense and Unarmored Movement are lost from this. However shield + Full-Plate will give more AC than Unarmored Defense anyway.
